The Paleo diet is named after the Paleolithic era. A time when humans were still evolving and said to have eaten a diet varying in animal fats, vegetables, fruits, and nuts. Grains and dairy were not a part of our historical evolution until roughly 10,000 years ago when grain agriculture and dietary use of dairy were becoming the new normal. It is said that humans take over 100,000 years to evolve and adapt to new nutrient mechanisms, leaving dairy and grains not fit for human consumption.
